Cuban Style Black Beans Frijoles Negros

2 cups Dunya Harvest Organic Black Beans*

1/2 cup green pepper, diced

1/4 cup red pepper, diced

1 bay leaf

10 cups vegetable stock (or water)

3 tbsp extra virgin olive oil

1 medium red onion, diced

4 tsp garlic, minced

1 can Dunya Harvest Organic Canned Black Beans

1 tsp oregano

1/2 tsp cumin powder

1/2 tsp black pepper ground

1/4 tsp cayenne

1/4 cup canned corn

Salt to tasted



Soak the dry beans in boiled water overnight or 8 hours minimum, then drain and rinse. In a pot, combine beans with 1/2 the diced pepper, bay leaf, and broth (or water) and bring to a boil, then simmer on low to medium heat, covered. 

In a separate sauce pan, heat oil on medium heat and sauté onions, garlic, and 1/2 the green pepper. When the onion is translucent, add the canned black beans and mash with a fork until the beans are broken up. Combine two pots then add salt to taste. Top with corn and the remaining red and green pepper. Enjoy!

* For a quick version, substitute 2 cups of dried black beans with 2 cans of black beans and do not soak overnight.
