1 cup Dunya Harvest organic green lentils
1 ½ cups water
½ cup Dunya Harvest organic steel-cut oats
¼ tsp. salt, plus more to taste
½ onion, diced
1 carrot, chopped
1 cup spinach, chopped
3 cloves garlic, crushed
2 tsp. ginger, grated
2 tsp. cumin powder
2 tsp. garam masala
1 tsp. cayenne (optional)
4 tsp. yogurt
1 tbsp. coconut oil
2 tbsp. Dunya Harvest organic brown rice flour
Prepare lentils according to directions below, mash loosely, and set aside. In a separate saucepan, bring 1.5 cups of water to a vigorous boil. Cook ½ cup steel-cut oats according to package directions. Add ½ cup steel-cut oats and ¼ tsp. salt. Cook on low heat for 15–20 minutes, stirring occasionally. Remove from heat and let stand covered for 3–5 minutes. Combine with lentils and refrigerate for 1 hour or until cool. Combine onions, carrots, spinach, garlic, ginger, cumin powder, and garam masala in a blender and mix well but do not liquifyliquefy. Fold in the yogurt, eggs, lentils, and oats and stir until the ingredients are blended together. Season to taste. Shape into patties about the shape of your palm and coat with rice flour. In a large frying pan, heat coconut oil on medium to high heat. Fry patties on both sides until golden and crispy, about 5 minutes per side. Yields 4 servings. Enjoy!
BASIC COOKING INSTRUCTIONS
Sort and rinse lentils before use. Bring 2 cups of water and 1 cup of lentils to a boil and allow the lentils to boil for 2–3 minutes. Add 1 tsp. salt. Cover saucepan and cook on low heat for 15–20 minutes or until tender. Yields 4 cups.
